What better way to mark a restart of business than with a shiny new Michelin Star plaque?
Claire Zammit Xuereb, Group Hospitality Director at AX Hotels Malta and Owner of UnderGrain – the recipient of a Michelin Star for 2021 – has praised the hard work and dedication of the team for making it happen.
“When we created the brand Grain, our intention was always to elevate Malta’s dining experience and we did! What a reward!” she says. “A very well-deserved award, for a splendid team, thank you for making this happen!”
Ms Zammit Xuereb thanked Chef Victor Borg “for his great leadership skills that brought us to this once again”, as the restaurant held on to its one star first awarded in 2020, merely months after opening its doors.
She also thanked the “strong kitchen brigade”, restaurant manager Thomas Mifsud Bonnici and his team, senior general manager Kevin Callus, as well as the team behind Rosselli AX Privilege, within which the restaurant is located, led by operations manager Moul Hajjar.
UnderGrain forms part of the ‘Grain’ brand, which includes Grain Street, bar and private dining within the five star hotel located on Merchant’s Street.
