The Xara Collection is celebrating its win of the ‘Innovation Sustainability Award’ at the Mediterranean Tourism Forum Gala Dinner, which was recently held at the Mediterranean Conference Centre.
This hospitality company has been pushing for increased sustainability within its hotels and restaurants – partially through the Xara Gardens.
Through said initiative, the owning family and management, together with guidance from young expert Farmer Cane Vella and Sustainable Resource Innovator Michael Bourne, are actively and perceptibly looking for a more sustainable way of doing business.
The Xara Collection is made up of The Xara Palace Relais & Chateaux, The Xara Lodge, de Mondion Restaurant, Trattoria AD 1530, and Xara Catering.
Thanks to the Xara Gardens, 50 per cent of the vegetables used in the Xara Collection’s various restaurants and the Xara Place Relais & Chateaux are home-grown.
“We are all very proud of our continuous efforts to push our gastronomic boundaries through our unique sustainable project at Xara Gardens by making a better world through cuisine and hospitality and continually pushing to put Malta on the international gastronomic map,” Xara Collection Director Justin Zammit Tabona said.
Waste food recycling, upscaling of waste material including wood and carton boxes amongst others, storage of rainwater and water retention techniques in the fields to reduce water required for irrigation, no pesticides (through companion planting) are additional sustainable concepts being implemented at the Xara Gardens.
